Anyone know of any great digital cameras that aren't too expensive? I need one where I can just set the settings and they will work for most things, since I can never remember how to change them or when I would want to. It would also be nice to have one with some kind of shaky hand blur control and that can deal with low light, no-flash situations. I've got no ideas on this sort of thing...

I have been pretty happy with the Canon PowerShot series, but they don't have the blur control. The Panasonic Lumix line has cameras with image stabilization for about $200-250, but I don't know much about them.
That is my story about digital cameras. The end!
I am a huge fan of the Lumix. They are pretty cheap yet feature-laden. Leica makes the optics. Image stabilization is key for my shakey hands...
I use the Panasonic Lumix fz30 - probably over the top for what you need, but the fz7 would probably be a good bet. The Canon Powershot series is also very good.
nikon coolpix and canon elph are worth looking into.
